Vineyard:  Harvest typically takes place between the second and third weeks of September.

Cellar: After destemming, the grapes undergo a brief cryomaceration and around 18 hours of skin contact. The must is then separated from the skins and completes alcoholic and MLF in stainless steel tanks.
