Mes Vendanges Bio Sauvignon Blanc

A light gold sauvy b for the savvy set, playful and carefree. Crystalline aromas of white flowers and wet-stones flowing into a fuller bodied expression of citrus and tropical fruit. It’s the pleasure principle at work. Pairs beautifully with lobster, crab, mussels, and clams and of course rich buttery cheeses like muenster and gouda or fresher whipped goat cheeses.

Vineyard & Vine Age: This wine comes from organic estate vineyards at 150-200 meters with the red iron rich limestone soils of this Eocene epoch scree. Located in the South of the Saint-Chinian appellation, the vines are grandfathered into a 3,000-hectare Natura 2000 national park. The biodiversity here is extreme. Hand harvested into small crates. Yields are limited to 35 hl/ha.

Cellar: Fermented at low temperatures to preserve floral and fruit aromas, this Sauvignon Blanc was aged on the lees for one week. No malolactic fermentation occurred. Vegan-friendly, it was fined using pea-based agents instead of animal products.
