Domaine Bersan

2023 Saint Bris AOC

A traditional blend of Sauvignon Blanc & Sauvignon Gris, the entry-level cuvée is sourced from the humbler Portlandian Marl soils of the north-northwest-facing part of La Ronce lieu-dit just above the village and the north-facing Breau lieu-dit just below it, each at about 200m asl. Portlandian marls notwithstanding, Jasper Morris highlights La Ronce as one of the four best sites (out of 63 lieu-dits), as it makes “a spicy and complex St-Bris that needs food.” Vines between 5 and 35 years of age, with 3.5ha going into this wine. Considering St-Bris has only 161 hectares, this cuvée is a flagship example for the appellation as a whole. The must cold-settles for 5-10 days before enjoying a slow, low-temperature fermentation in 100% stainless steel. The wine then ages 6-10 months on the fine lees before being gently filtered and bottled, clocking 12.5% ABV in 2023, a testament to these Northern climes. Enjoy from now through 2028 as an aperitif or with salads topped with crab or chèvre.

Region:  Saint-Bris, Bourgogne

Appellation:  Saint Bris AOC

Varietal/Blend:  Sauvignon Blanc & Sauvignon Gris

ABV:  12.5%

Vineyard & Vine Age: Fruit from 3.59 hectares in the La Ronce and Breau lieux-dits of Saint-Bris-le-Vineux. The 5- to 35-year-old vines grow at approximately 200 metres on north- to northwest-facing slopes, rooted in Portlandian limestone and marl soils, including the sandy Portlandian marls of La Ronce. The vines are trained to simple Guyot and harvested by hand.

Cellar: The grapes are pressed immediately after harvest, and the must is cold-settled for 5–10 days. Fermentation takes place slowly at low temperature in stainless steel, beginning spontaneously with indigenous yeasts. The wine then ages for 6–10 months on fine lees in stainless steel before gentle filtration and bottling.
